Ingredients
- 3 cups cherry tomatoes (2 packages tricolored cherry tomatoes)
- 1/2 cup olive oil
- 2 tbsp garlic fresh copped (can sub jarred minced)
- salt and pepper to taste
- 14 oz pizza sauce Don Pepino pizza sauce preferred
- 2 tsp red pepper crushed
- 8 oz Burrata cheese one package of 4 balls
- 3 basil leaves
- baguettes 1 loaf
Instructions
- Heat oven to 400 degrees
- Set cheese out while cooking
- Toss tomatoes, olive oil and garlic. Top with S&P.
- Bake for about 30mins or when tomatoes start to soften and split. Toss a few times.
- Stir in pizza sauce and crushed red pepper to tomatoes. Top with burrata, Turn the oven off and bake for a few minutes to warm cheese. Don’t over cook or cheese will bust.
- Add basil leaves for color, cheese can be topped w/a little olive oil, S&P, Garlic, etc
- Serve with toasted/grilled baguettes
